GAZPACHO (Spanish Tomato Soup) __________________________________________________________________________________ |

One of our favorite cold soups and an original from Southern Spain, it is the perfect accompaniment to any of our grill-ready summer entrées, such as the Sangria Flank Steak, the Southwestern Lime Chicken, or the Spanish-Spiced Steaks. A few simple ingredients produce a flavorful, nutritious, and refreshing soup. Take advantage of the great bounty and selection of farmer's market tomatoes, now in season. We use plum (Roma) tomatoes, but feel free to substitute with your own favorite.

INGREDIENTS (4-6 SERVINGS)
For the soup: 4 lb. fresh, ripe tomatoes (cut in half vertically and remove seeds and stem section) 2 cloves garlic, peeled 2 slices of white bread 2 tablespoons sherry wine vinegar 3/4 cup olive oil 1/2 tsp. salt 1/4 tsp. pepper
For the garnish: 1 small onion (finely diced) 1 cucumber, seeds removed (finely diced) 1 red pepper (finely diced) 1 large tomato (finely diced) 2 hard-boiled eggs (finely diced) 2 cups good quality, plain croutons
To prepare the soup, remove the crust from the bread slices and rinse the bread under cold running water. Squeeze the water out completely with your hand until it forms a piece of dough. In a large food processor, combine the seeded tomatoes, garlic, sherry wine vinegar, and the piece of bread dough. Depending on the size of your food processor you may have to do it in 2-3 batches and split up the soup ingredients proportionately. Process the mixture for approximately 2 minutes. Add salt and pepper to taste. Process for another 2-3 minutes, this time while slowly pouring the olive oil through the opening on top of your food processor. When finished, the soup should have a smooth, velvety consistency. Remove from the food processor and place in refrigerator (a large bowl or pitcher works well) for at least 4 hours.
For the garnish, chop the above ingredients and keep them refrigerated in separate trays or bowls. Before serving, remove the soup from the refrigerator. Add 2 cups of very cold water and mix well. Adjust for salt as needed and serve immediately. Place the garnish trays on the table so your guests can serve themselves as needed. Enjoy! |
